Tried & Tested #3

It doesn't mention in the recipe, how long it takes for the fudge to set. From my experience, it takes at least 24 hours and, even after this length of time, its still really soft and a little difficult to pick up. Although it is the best fudge I've ever tried, really creamy and sweet. You can only eat one small square at a time, but that is all you need.
 
Stupidly, I ignored the warning saying to wear oven gloves. We don't really have a decent pair and I thought I'd be OK without... this is not the case at all! Please, please, please wear oven gloves when you make this. The pan, spoon and thermometer get extremely hot. If you can, take it in turns with someone else.

OK, these were the best things I have ever eaten. No lies. We left out the nuts and berries and had a pure chocolate version and they were just to die for. I melted the chocolate and butter in the microwave, rather than in a pan as suggested, and it literally took minutes to make up. If you want something quick and delicious, bake these. They taste best when they've cooled (the gooey middle sets a little bit better once cooled).

So, here is my most recent creation - Disney themed cupcakes! They were for a gorgeous little boys Christening and his favourite Disney films were monsters inc, toy story and mickey mouse..

So, this is our first 'Tried & Tested' post. I decided that it may be a useful addition to my blog because most of my inspiration comes from recipes in books/magazines. I will give you all my advice which may not be available in the books.

This recipe tastes amazing. They are great biscuits but are ridiculously addictive.. which is why we don't have a picture (sorry!). I would recommend adding chocolate chips 'cos everything tastes better with chocolate.

I did have a challenge with the cutter.. my mickey kept loosing his ears so after a few attempts, I gave up and grabbed my pooh bear cutter instead. If you have more time/patience than me then it will work but I, at this moment in time, had neither.

The ULTIMATE Chocolate Cake

This was promised to you too long ago.. but the wait is over and it was worth every second.

I would include times for the recipes but they vary, I use a kitchen aid mixer (best investment everrr!) so the length of time it takes me  to mix up a cake is seconds as opposed to by hand. Also, if you choose to make cupcakes instead the cooking times will be slightly different. As a rule, for me, cupcakes usually take 15-20 mins, cakes take 20-40mins depending on size. Just keep an eye on its colour, appearance and poke a skewer in there to test its middle.

Step one

Raid your nearest shop for different types of chocolate - the more the better! Also, pick these up too if you need to?

  • 8oz Caster Sugar
  • 7oz Self Raising Flour
  • 1oz Cocoa Powder
  • 8oz Butter
  • 4 eggs
Step two

when you're back home, cream together your butter and sugar until light in colour and smooth in texture. If you use granulated sugar instead of caster sugar, it will stay slightly gritty at this moment in time.

Step three

Crack & beat the eggs (not as violent as it sounds, I promise!) then gradually stir into the the butter/sugar mix. To avoid curdling add a little flour.

Step four

Fold in the flour and cocoa powder

Step five

Pour the mix into your chosen tins which have been greased and lined. Bake at gas mark 4 for 15/20 minutes for cupcakes or 20/40 minutes for a cake. 

Step six

Wait until its cooled...

Step seven

now you can be let loose with your chocolate decorations.. go wild. Melt it, pile it.. do whatever you need to to make it mouthwatering.

Sorry!

Hi..

I have to apologise for being useless.. I know, I've neglected my blog and I need to change that.

But I do have good news - I have been very busy baking over the past god knows how long and I have lots of awesome things to share with you.

I'm going to make a couple changes (good ones, I promise!) such as adding recipe reviews from popular cake decorating magazines and maybe some books and giving you any useful tips I've picked up along the way.

So, I guess you may be wondering what I've been up to recently? (If not, don't read the rest of this!). I have been very busy baking and bombarding the world of facebook with my latest bakes. Give it a like if your on there!
